In keeping with the last few years, we bring back the two most popular loaves of 2018 for the last two months of this year. The November Special sees the return of this year’s bestselling monthly special: The Pain de Campagne. Its versatility and ease of use were both huge factors in its popularity – resulting in the annual comeback.
A classic French loaf, a pain de campagne is literally a country bread. It is typically made using a starter with predominantly white flour and a smaller wholemeal and rye flour component. Our November loaf, once the May Special, has the chewy crust of a baguette but the more complex flavour of whole wheat.
Consider Wild Wheat’s Country Sourdough, our take on the traditional pain de campagne, to which we’ve added malt and cider for a heartier taste. November’s Pain de campagne appeals to fans of the Country Sourdough who are after a lighter alternative.
The November Special comes in an oval loaf which makes it a good slice for sandwiches and for the toaster. The crust and the soft, dense crumb are also perfect to accompany dips and cheeses or torn into croutons for a panzanella.
