Sorrel and Red Lentil Soup

Serves 4

Ingredients

  • 1 med onion chopped
  • 25gm butter or oil
  • 1 stem celery (or 2 finely sliced leeks)
  • 1 med carrot sliced
  • 75gm red lentils
  • 500ml chicken or vegetable  stock
  • 75 – 100 gm sorrel – coarse stems removed and finely shredded
  • 1 tbsp cream or sour cream
  • Salt and finely ground black pepper

 

Instructions

1. Saute onion, celery/leeks and carrots in oil or butter until softened.

2. Add stock and lentils and cook till soft. Mix thoroughly with stick blender.

3. Add cream or sour cream and finally blend shredded sorrel, season with salt and pepper, blend and serve.
