Cook chicken until golden brown.
Combine salad or mesclun mix, mandarin segments and next 5 ingredients (through onions) in a large bowl.
Combine orange juice, balsamic vinegar, oil, salt, and black pepper; stir with a whisk.
Pour juice mixture over salad mixture, tossing to coat.
Divide salad mixture among 4 plates; top with chicken and almonds.
